Nutty Porridge

Are you gluten-free? Or do you just fancy to spice up your classic oatmeal? I have something special for you. For us in Czech this is an equivalent to semolina porridge, we have been used to eat for breakfast as young kids. But this is a bit more nourishing version.


Warm nutty porridge

Gluten-Free, Dairy-Free and Vegan (if you like)


This porridge can be made vegan friendly if you prefer.

It is gluten and dairy-free from the get-go. Using a mixture of nuts and seeds helps balance blood sugar, hormonal balance, high in protein and good fats, satisfy your sweet tooth and leave you with warming feeling in your tummy.


 

Nutty porridge


Ingredients:

2 tbsp cashews 2 tbsp almonds 2 tbsp flaxseeds 1 tsp chia seeds 100ml coconut milk 100ml water 1/2 tsp cinnamon powder Toppings: 1 tsp butter or ghee (use almond meal if vegan) 1 tbsp maple syrup (use more if you like) 1 tbsp cacao powder 1 cup of fruit Top up with nuts or seeds (optional)


Method: Ground all the nuts and seeds to a fine powder. Place into the pot. Add cinnamon, water and coconut milk. Bring to boil and stir often. Cook for about 1 min once bubbles start to appear. Transfer into your morning porridge bowl. Once still warm, top up with butter (which will immediately melt), maple syrup, cacao and finish with the fruit of your choice. Enjoy.
